In a world where health-consciousness and the pursuit of culinary delight often seem at odds, the Blueberry Wonder Workshop emerged as a beacon of enlightenment. It’s my pleasure to join this wonderful event as well as the launching of Oregon Washington Blueberries. It seamlessly blended informative talks, culinary demonstrations, hands-on activities, and an array of delectable treats, all centered around the antioxidant-rich treasures known as Oregon Washington Blueberries

Mr. Eddie Saw, the Malaysia Representative of US Blueberries, took to the stage. A luminary from Total Market Solutions, he mesmerized us with a captivating discourse on the incredible journey of blueberries. From their humble origins to their current status as nutritional powerhouses, Mr. Saw left no stone unturned. He unveiled the fascinating tale of these tiny blue gems that have risen to prominence in the realm of health and wellness.

It's worth noting that Oregon Washington Blueberries are meticulously selected to ensure that only the finest quality blueberries grace your plate. These delectable gems can be found at major supermarkets and grocers, waiting to be incorporated into your journey toward a healthier, more flavorful life.


The gastronomic journey reached its zenith under the  expert guidance of Chef Zie Zie. With finesse and flair, she demonstrated the creation of a tantalizing Seared Chicken Quinoa Bowl with Fresh Blueberries. I was spellbound as they witnessed the magical fusion of flavors that blueberries brought to both savory and sweet dishes.


Here is the recipe of the Seared Chicken Quinoa Bowl with Fresh Blueberries:

Ingredients:

1. Chicken Marinate

Chicken Breast - 1pcs, Garlic Salt - ½ tsp, Garlic Pepper - ½ tsp, Paprika - ½ tsp, Mixed Herb - ½ tsp

2. Sauce

Kewpie Mayo - 1 tbsp, Lemon Juice - 1 ½ tbsp, Lemon Zest - ½ tsp, Salt - ¼ tsp, Pepper - ¼ tsp

3. Other Ingredients

Blueberry - 20gm, Baby Spinach – 58gm, Zucchini - 15gm, Pumpkin - 15gm, Quinoa - 100gm, Toasted Pumpkin Seeds - 1 ½ tbsp


Steps:

 1. To prepare the chicken breast, poke some holes and tenderize the chicken breast using the back of your knife, and lightly smashed it. Once it's tenderized, marinate with the dry ingredients with garlic salt, garlic pepper, paprika, mixed herbs. Give it a good rub and marinate for at least 5-10 minutes.

     2. Sear chicken breast in a pan with some oil on 1 side for 5 minutes until golden brown colour, flip the chicken and continue steam cook the chicken breast with 1ooml water for another 7 minutes to ensure the chicken breast is moist. Once is cooked thoroughly, rest the chicken for 5 minutes before cutting.



      3. Using the same pan packed with flavour, sauté zucchini cubes with salt and pepper for 4-5 minutes, and set aside.

     4. After that, sauté pumpkin with a litte bit of oil, season with salt and pepper, add in room l water to continue steam cook for 5 minutes until al dante texture.

5.     5. On a pan, toast pumpkin seeds without oil for 5 minutes on medium heat until slightly puffed.

6.     6. Prepare quinoa by cooking with boiling seasoned salt water until light and fuffy.

7.      7. Lastly, to prepare creamy lemon sauce, zest half of a lemon, and combine mayonnaise, lemon zest, lemon juice, then season with salt and pepper to taste.

8.     8. To assemble the dish, place cooked quinoa on a bowl sliced chicken breast followed by sauteed zucchini and pumpkin, baby spinach, toasted pumpkin seeds, dried cranberries, then garnish with fresh blueberries, rosemary and lemon zest.



Next we have a chance to do our own blueberries dessert and drink.

Since I have no experience in baking, I found it difficult to stir the whipped cream and cream cheese into a fluffy and soft state. And I now I understand why the pastries is so expensive and willing to pay if the pastries is yummy. XDD



Here is the recipe of Blueberries Cream Cheese Tart:

Ingredients:

Main: Blueberry Compote, Fresh Blueberries - 50gm, Brown Sugar - 2 tbsp, Water - 8ogm

Other Ingredients:

Light Coconut Milk - 50 ml, Pineapple Juice - 8oml, Blue Pea Flower Water - 30ml, Lemon Juice - 15ml

Ice - 1 cup

Garnish:

Blueberry - 5 to 6 pcs, Mint Leaf - as needed, Gold Leaf/Dust - as needed

Steps:

1.     

 1. To make blueberry compote, heat up a pan, put in fresh blueberries, brown sugar and water. Cook for 5 minutes on high heat, then 10 minutes on medium heat until slightly thickens. Set it aside and let it cool before use.

             2. In a mixing bowl, whip cream cheese until soft and fluffy.

        3. In another mixing bowl, whip up whipped cream until slightly thickens.

        4. To prepare the cream cheese filling, lightly fold in whipped cream into the fluffy whipped cream cheese, followed by adding in lemon juice, blueberries compote and vanilla essence.

   5. When mixtures are combined, fill the mixture into a       pipping bag.

           6. To assemble, pipe the cream cheese filling onto baked tart shells, decorate mini tarts with fresh blueberries.

                 7. Garnish with mint leaf and gold leaf.

                 

                   


                                   



     Finally we get to do our drinks- Blueberries Colada. I found out very interesting as I just mix a few ingredients and I can get a yummy drink.


Ingredients:

Mains : Blueberry Compote, Fresh Blueberries - 50gm, Brown Sugar - 2 tbsp, Water - 50gm

Other Ingredients: Light Coconut Milk - 50 ml, Pineapple Juice – 50ml, Blue Pea Flower Water - 30ml

Lemon Juice - 15ml, Ice - 1 cup

Garnish: Blueberry - 5 to 6 pcs, Mint Leaf - as needed

1.      1. To make blueberry compote, heat up a pan, put in fresh blueberries, brown sugar and water. Cook for 5 minutes on high heat, then to-15 minutes on medium heat until slightly thickens. Set aside and let it cool.

2.     2. In a cup, rim the glass with blueberry compote, then fill it with ice.

3. 

     3. Put in blueberry compote, followed by light coconut cream, pineapple juice, and lemon juice.

            4. Lastly, top with blue pea flower water.

         5. Garnish with mint leaves and fresh blueberries.

         6. Stir well and enjoy.


      





After this we have graduated from blueberries culinary workshop. YAY! I’m really a fans of blueberries and it good to our skin and health. This Oregon Washington Blueberries is harvesting in late June and continues into September. I really hope I got a chance to handpick those blueberries one day.


Fun Fact ! One cup of blueberries contains 80 calories, 15 percent daily vitamin C, 11 percent daily fiber and other essential nutrients to boost the immune system. They are certified as a heart-healthy food by the American Heart Association and contain natural compounds that help the brain stay strong.


 I have tried their blueberries and they juicy and crunchy.   They are available in fresh and the freeze dried state. I’m pretty sure you will ask which one is better. In terms of antioxidant value and fibre , both are same according to the Health and Safety Fund of North America.
